ingredients:
1-15 oz can chickpeas/garbanzo beans rinsed and drained
1/2-red onion, thinly sliced
2-stalks celery, sliced
1-cup fresh flat leaf parsley
2-Tbsp extra-virgin olive oil
2-tsp red wine vinegar
Salt & pepper
In a large bowl, combine all ingredients with 1/2 tsp salt and 1/4 tsp pepper. ENJOY!
